Sulfur dioxide is a gas. It is invisible and has a nasty, sharp smell. It reacts easily with other substances to form harmful compounds, such as sulfuric acid, sulfurous acid and sulfate particles. About 99% of the sulfur dioxide in air comes from human sources.
Sulfur dioxide is sometimes used as a preservative for dried apricots, dried figs, and other dried fruits, owing to its antimicrobial properties, and is called E220 when used in this way in Europe. As a preservative, it maintains the colorful appearance of the fruit and prevents rotting.
